Makes one serving

3 eggs
2 cups vegetables or salad of choice, (green preferably)
1 cup shrimp, cut in two
½ cup vegetable coulis
2 tbsp basil dressing
¼ tsp grape seed oil sea salt & pepper, to taste




In a hot non stick pan, add oil and eggs; let cook.
When the eggs are cooked, set aside on a plate.
Now, add the shrimp to the pan; let sear.
When the shrimp is almost cooked, add basil dressing and vegetable coulis.

Ready to serve!
