Breakfast Stuffed Bell Peppers

Who doesn’t love breakfast any time of the day? These Breakfast Stuffed Bell Peppers are delicious in the morning, mid-day and at night.  They’re even great on the go! Plus, they’re approved for both IP Phase 1 & 2.  Try them out and let us know what you think!

Ingredients
1-2 eggs and 2 egg whites
1/4 of a chopped white onion
1 cup spinach, chopped
1-2 tbsp. salsa of choice
1 medium sized bell pepper

Directions
Sauté the onion and spinach in 1/2 tsp olive oil. Season with salsa after onion and spinach are sautéed. Distribute mixture evenly into pepper halves. Add 2 tbsp. egg whites. Bake in oven at 375 for approx. 30 min or until eggs are set.

Ideal Protein Recipe for Weight Loss: BBQ Spicy Shrimp

healthy-eating-new-orleans-recipe-BBQ-spicy-shrimpLike pretty much every other season, Lent in New Orleans has its own distinctive food – seafood!  While abstaining from meat is supposed to be a sacrifice, it’s hard to feel like we’re sacrificing with all the amazing seafood we have here.  When you’re on the Ideal Protein diet, you don’t have to feel like you’re missing anything either. Try this amazing recipe for BBQ Spicy Shrimp and let us know how it helps you with your weight loss and weight management.
Ingredients:
1 lb medium shrimp, peeled and deveined, with tail shell intactspicyshrimp
2 teaspoons olive oil
1 tbsp Cajun seasoning – homemade or store bought
1/2 tbsp chipotle peppers in adobo sauce, finely chopped
2 packets of Splenda1 lemon or lime, sliced in wedges for garnish
Salt and pepper, for seasoning

Directions:
In a large bowl, toss together the shrimp with the olive oil, Cajun seasoning, splenda and chopped chipotles in adobo sauce, and mix well to fully coat the shrimp. Cover and refrigerate for 30-60 minutes.
Barbecue shrimp until they curl up and turn pink.
