2-minute Shrimp Scampi

Lack of time is often a big reason why we reach for the easy, unhealthy options for dinner. You know, the ones that usually come in a box and are completely processed! Now, with this 2-minute Shrimp Scampi there is no excuse for an unhealthy meal.  You won’t believe how easy this gourmet meal comes together in just 2 minutes – perfect for those busy weeknights! And it’s great for all phases of Ideal Protein.


  • 24 large frozen shrimp (peeled and deveined)
  • 1/2 C spinach leaves, chopped
  • 1 tsp olive oil
  • 1 clove garlic, crushed
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes


In a large microwavable bowl, mix all the ingredients together, tossing well to coat the shrimp. Microwave for 1 minute. Remove and toss well again. Microwave for 1 minute and 15 seconds more. Sprinkle mixture with red pepper flakes.
