Ideal Protein: Cauliflower “Mashed Potato” Recipe

cauliflowerWhen starting and sticking to a dietary lifestyle change, some people often say that they miss the good ole staples like rice and mashed potatoes. Here is an Ideal Protein: Cauliflower “Mashed Potato” Recipe, created by Ideal Protein’s own Chef Daniel Verati, that can easily replace those starchy carbs and give you the taste of your Mama’s homemade cookin!  It’s delicious and easy to make!

Ingredients

• 2 cups Cauliflower
• 1 bag Herbal Tea
• 1 Tbs Walden Farms Mayo
• 1 tsp Olive Oil
• 1 Clove Garlic
• Pinch of Ideal Salt
• ¼ tsp Lemongrass Paste
• Baby Spinach Leaves, raw, chopped fine

Directions
Cut the cauliflower very fine into small pieces.  In a pot of boiling water, add
the cauliflower along with a pinch of salt and cook for about 5 minutes. Turn off the
heat, add a bag of herbal tea and keep the lid on to lock in the flavor. Let sit for 5
minutes or until cauliflower is tender. Drain the cauliflower and remove the tea bag.

In a medium bowl, mash the cooked cauliflower with a fork until it reaches a smooth consistency. Add the Walden Farms Mayo, olive oil, Ideal Salt, and lemongrass paste. Mix well.

On a plate, serve the “mashed potatoes” mixture, using the spinach leaves as garnish. Enjoy!
